PROMITOR® Soluble Gluco Fibre is highly stable making it ideal for use in low pH systems and high temperature processes such as beverages and fruit fillings where its stability ensures the fiber content remains constant over the shelf life of the product. Inulin from chicory is a polydisperse mixture of linear fructose polymers with mostly a terminal glucose unit, coupled by means of b(2-1) bonds. The number of units (degree of polymerisation) can vary between 2 and 60.
